Start with a bed of arugula dressed with homemade balsamic vinaigrette. (Dijon mustard, honey, balsamic vinegar, lemon juice, and olive oil) Top arugula with pearled Cous Cous, feta, baked tofu cubes and dried cranberries.

The juices are better than they look. This one actually looks pretty
good but is the most bitter concoction. The ones that are the yucky
brown have been the tastiest.
